Spicy Tortilla Soup (Vegan & Dairy Free)
yield 3-4 people
Olive Oil
1 Onion, finely chopped
1 Red pepper, chopped
3 Cloves garlic, minced
1 Jalapeno, finely chopped
2 teaspoon chilli powder
2 teaspoon ground cumin
1 teaspoon smoked paprika
4 cups vegetable stock
1.5 Â cups pre-cooked black beans
1 cup diced tomatoes
1 cup fresh corn
1-2 Â tablespoons tomato paste to taste
Directions
Step 1:  In a large pot, add the oil, onion, red pepper over medium hear. Cook for 5 minutes or until slightly charred. Add the garlic, jalapeño, and spices. Cook for a few minutes until blended and fragrant.
Step 2: Add the tomato paste, beans, vegetable stock and corn. Reduce the stove to low hear and simmer until veggies and beans are tender.
Optional Toppings: You can add some Avocado, coriander or tortilla chips on top of the soup when serving.
