Stinging Nettles help with oxidative stress in the body which can build up overtime as your immune system weakens from fear, anxiety, or depression. Ingredients
3 tablespoons Butter
3 tablespoons Olive Oil
1 large Onion, chopped
1/2 cup uncooked rice
several large handfuls Stinging Nettle Tops
3-4 cloves chopped Garlic
8 cups Chicken or Vegetable broth
1 teaspoon Himalayan Salt
mixed Vegetables
1/2 teaspoon Freshly Ground Pepper
4-6 Potatoes
4 large Leeks
Directions
- Take the top 4-6 inches nettles. Remove the leaves. You may need to rinse and pat them dry. Use gloves as raw, fresh nettle – stings!
- Start cooking your rice of your liking, wild, brown or white.
- In a separate large soup pan melt the butter, add the onion and garlic and simmer until translucent.
- Add the broth and onion and garlic mixture and nettles leaves in the soup pan and bring to a full boil. Simmer for about 20 minutes. At this point we use an immersion blender and blend until smooth.
- Add the vegetables, rice and salt and pepper (and any other herbs you like) and simmer a few more minutes.
