Nettles Soup

Stinging Nettles help with oxidative stress in the body which can build up overtime as your immune system weakens from fear, anxiety, or depression. Nettles is restorative and natures powerhouse when it comes to vitamins and minerals. It can also aid in stabilizing blood sugar. This can help improve mood, fatigue, and energy levels.

Ingredients

3 tablespoons Butter

3 tablespoons Olive Oil

1 large Onion, chopped

1/2 cup uncooked rice

several large handfuls Stinging Nettle Tops

3-4 cloves chopped Garlic

8 cups Chicken or Vegetable broth

1 teaspoon Himalayan Salt

mixed Vegetables

1/2 teaspoon Freshly Ground Pepper

4-6 Potatoes

4 large Leeks

Directions

  • Take the top 4-6 inches nettles. Remove the leaves. You may need to rinse and pat them dry. Use gloves as raw, fresh nettle – stings!
  • Start cooking your rice of your liking, wild, brown or white.
  • In a separate large soup pan melt the butter, add the onion and garlic and simmer until translucent.
  • Add the broth and onion and garlic mixture and nettles leaves in the soup pan and bring to a full boil. Simmer for about 20 minutes. At this point we use an immersion blender and blend until smooth.
  • Add the vegetables, rice and salt and pepper (and any other herbs you like) and simmer a few more minutes.
