Morning Energizer Egg & Asparagus
This morning energizer eggs asparagus aids in fighting depression. Depression has been linked to low levels of folic acid, and one vegetable that boosts this mood-enhancing nutrient is asparagus. Double that up with eggs to combat stress and anxiety, and you have yourself a great (simple) breakfast and start to the day. I love this one because it looks really fancy and takes no time to assemble. The eggs do not need to be poached, cook the egg to your enjoyment. I have kept this recipe extremely simplified, if you feel like you need more, I would suggest a cut up apple or fruit on the side rather than bread, enjoy!
Ingredients
- 6 spears asparagus
- 1 pinch paprika
- 1 large free range egg
- 1 pinch parmesan cheese
- 2 sprigs mint
Instructions

Bring a pan of salted water to the boil, then reduce to a simmer.
Snap the woody end off the asparagus, then griddle for a few minutes on each side, sprinkle with the paprika and divide between the pieces of toast.
While the asparagus is grilling, poach the eggs in the simmering water for 3 minutes. Remove the eggs and drain, place them on top of the asparagus.
Grate over the parmesan, add fresh mint leaves.
