Magnesium Rich Rice
This is so decadent, the day I added an avocado to my rice to create magnesium rich avocado rice was pretty life changing, and there was that time when I added it to my brownies, but thats for a different recipe! This makes for a great side dish or a main ingredient for taco Tuesday, it is something a little more exciting if you are entertaining or just giving your body the love it deserves. Avocados are one of the best foods to lower stress, and keep your blood sugar stabilized, go ahead and get creative adding it into your favourite dishes.
Ingredients
- 1 and 3/4 cups water
- 1 tsp salt
- 2 cups brown rice
- 1 avocado mashed
- the zest and juice of 1 lime
- 1 tsp salt
- 1/4 cup fresh cilantro chopped
Instructions

Cook rice to specified instructions on bag, using one tsp himalayan salt instead of table salt (typically high quality brown rice will take up to an hour) You can cook the rice via rice cooker, in the oven or stovetop. Any method will achieve the same results!
Cut the avocado in half, remove pit and spoon out avocado. Mash with a fork in a bowl. Spoon the mashed avocado into the hot rice and mix together. Stir in the lime zest, lime juice, salt, and cilantro before serving.
